Celeb Chef Teaches Pathmark Shopper Heart-Healthy Cooking

Award-wining chef Paul Lynch showed North Bergen, N.J., resident Cynthia Beaumont how to shop her local Pathmark for most of the ingredients needed to make a heart-healthy meal, and then spent a full day teaching her how to prepare meals from them.

The daylong cooking spree, held Jan. 5, was the grand prize in a nationwide photo contest called “I Love My Whole Grains,” sponsored by Oldways and the Whole Grains Council.

As Beaumont and her family watched, Lynch prepared broiled salmon with asiago polenta cakes, beef barley soup, country-style ribs with whole grain risotto, and chicken all’arrabbiata with whole grain pasta. “We wanted to prove that delicious, healthy, restaurant-quality food can be accessible to everyone,” said Lynch, who is executive chef at the FireLake Grill House and Cocktail Bar in Minneapolis.

Cynthia Harriman, director of food and nutrition strategies for the Whole Grains Council and its parent organization, Oldways, assisted Lynch. At the end of the cooking session, Harriman presented the Beaumonts with a grocery gift certificate and two cookbooks, so they can continue to try new whole grain dishes.

Beaumont and 47 other contest winners also received a range of whole grain product samples donated by such manufacturers as Anderson Trail, Annie’s Homegrown, Arrowhead Mills, Barbara’s Bakery, Barilla, Grupo Bimbo, Bob’s Red Mill, ConAgra Mills, Corazonas, DeWaffelbakkers, Dr. Kracker, Essential Eating, Flowers, FritoLay, Kashi, Mestemacher Bread, Nature’s Path, Nestlé, Quaker Oats, Riviana Foods and Shiloh Farms.

Boston-based Oldways is a nonprofit consumer advocacy group that aims to change the way people eat through positive and practical programs grounded in science and tradition. The Whole Grains Council (WGC) is an Oldways program working to increase consumption of whole grains for better health.
